Overview
Koshimeijo Sake Brewery is located in Tochio, Nagaoka City, Niigata Prefecture, and is engaged in the production of traditional Japanese sake with a rich history.
It was founded during the Kyoho era (1716–1736) as Yamabaya, and in 1845, another brewery called Yamashiroya was established.
The two breweries merged in 1934, leading to the establishment of Koshimeijo Sake Brewery as it is known today.
This region is characterized by beautiful terraced rice fields and is particularly known for the use of a rice variety called "Koshi Tanrei" in its popular sake, "Ichijo."
Koshimeijo also produces shochu, which is well-regarded for its quality.
Recently, new shochu varieties have appeared, though some products may be sold out.
In addition to this, high-quality sake such as "Koshi no Tsuru PREMIUM" is featured, with many products made from 100% locally sourced rice.
One of their creations, "Yamashiro-1st CLASS," is a sake made using the Kimoto method, known for its unique flavor that is neither overly dry nor too fruity.
It pairs exceptionally well with food, as it contains only rice and rice koji as its ingredients.
The simplicity of these components results in a deep flavor profile that has garnered support from many.
Furthermore, "Koshi no Tsuru Honjozo Junmai Ginjo Mukouka Kamekuchi Naori" is characterized by its rich aroma and a robust flavor that is somewhat atypical for sake from Niigata.
Its full-bodied nature, along with its moderately sweet taste, makes it an excellent choice to enjoy without any accompaniments.
It pairs particularly well with dishes that have strong flavors, offering a variety of ways to be enjoyed.
Koshimeijo Sake Brewery places great emphasis not only on the production of sake and shochu but also on the commitment to quality and meticulous brewing techniques.
Therefore, visiting the brewery to experience its allure firsthand is well worthwhile.
The wines born from carefully selected local rice and water reflect the unique climate and culture of this region.
Be sure to visit and enjoy the rich flavors they have to offer.
