    The cuisine includes fresh prawns with a crisp texture from Ishikawa Prefecture, aburame (flounder) from Awaji Island, tai (sea bream) sashimi from Nagasaki Prefecture, and taiyaki (fish-shaped cake) from Aichi Prefecture.
     Other menu options include vinegar-soaked tsuchiyama junsa (a type of mountain vegetable) from Shiga Prefecture and mozuku (a type of seaweed) chawanmushi (savory steamed egg custard) from Noto.
     Particularly popular are the chawanmushi and itamasu (sakuramasu) cherry salmon, which are delivered directly from Hakodate and have a unique and delicious melt-in-your-mouth texture.
