    "Sushi Yamasaki" is a restaurant located in Akasaka, Chuo-ku, Fukuoka City, Fukuoka Prefecture.
     It is about a 5-6 minute walk from Akasaka Station.
    The interior of the restaurant has a calm atmosphere with dim lighting and 6 counter seats.
    Rather than focusing on fish from Kyushu, this restaurant serves seasonal fish as sushi toppings.
    In particular, the herring from Hokkaido is superb, with larger shari (sushi rice) and a rich aroma due to the use of red vinegar at a higher temperature.
    Lunch time starts at 12:00 and is served until 13:30.
     Dinner time is from 18:00 to 21:30.
    The chefs, who are alumni of "Yamanaka," strive to create an original taste.
     They use red vinegar for the seasoning of the sushi, resulting in a delicate and delicious balance without overpowering the shari.
     The fatty tuna in particular is extraordinary, and the pacing of the meal is just right.
    This restaurant offers a variety of dishes, and during the season for kawahagi (filefish) and ankimo (monkfish liver), you can enjoy them as well.
     They also serve eel and sea urchin.
     Each dish is well-balanced and delicious.
    "Sushi Yamasaki" is located at the end of Akasaka and is popular among young women due to its stylish interior.
     All the appetizers and sushi are delicious and reasonably priced.
     In particular, I highly recommend it during the seasons for kawahagi and ankimo.
    This restaurant also offers a lunch course, where you can enjoy 10 pieces of nigiri sushi and chawanmushi (steamed egg custard) for around 3000 yen.
     The white fish nigiri is especially delicious, and it offers great value for the price.
    The chefs at "Sushi Yamasaki" are committed to using high-quality ingredients and putting effort into their preparations.
     Their skills are truly impressive, and their signature dishes such as "iidako" (baby octopus), "yokowamaguro" (longtail tuna), and "ikura" (salmon roe) are outstanding.
