What to Expect

You arrive in Eiheiji, a town in Fukui Prefecture known as the home of one of Japan’s most significant Zen Buddhist temples. The surrounding area has a quiet, regional character distinct from major urban centers, and the sushi restaurant where your session takes place reflects that local identity — a casual, working establishment rather than a high-end dining venue. Your guide meets you and introduces the session before you step inside.
Once the session begins, the chef stands before you and demonstrates nigiri technique step by step. You watch closely, then replicate each motion — pressing, shaping, and forming rice and fish into individual pieces under the chef’s direct guidance. Your guide is present throughout, translating instructions and relaying your questions to the chef so nothing gets lost in the process.
By the end of the 90-minute session, you have shaped a set of nigiri pieces with your own hands, made under the instruction of a chef who works with these ingredients daily. You sit down to eat what you have made, with the option to order additional drinks or food at your own cost.
