What to Expect
You arrive at a casual sushi restaurant in Fukui, a prefecture on the Sea of Japan coast long recognized for the quality of its seafood. As you settle in, a guide introduces the session and connects you to the setting — a working restaurant where sushi is prepared daily, not a demonstration kitchen.
The sushi chef stands before you and walks through the fundamentals of nigiri, shaping rice and placing fish with deliberate, practiced movements. You follow along, forming rice with your hands, positioning toppings, and pressing each piece into shape. Between attempts, you ask questions directly to the chef through the guide, adjusting your grip and technique based on the responses you receive.
By the end of the 90-minute session, you have shaped a set of nigiri pieces using the same method the chef applies in daily service. You sit with what you have made and eat it at the restaurant — the result of your own hands following a professional’s instruction.
