What to Expect
Nanao sits at the heart of the Noto Peninsula, a coastal region long associated with seafood culture and traditional food craftsmanship. When you arrive at the restaurant, you are welcomed into a setting where working chefs prepare sushi daily. This is not a purpose-built classroom — it is an active dining establishment, and that context shapes everything about how the session feels from the moment you walk in.
The chef demonstrates nigiri-shaping and roll-making techniques directly in front of you, and you follow along step by step. You press, shape, and assemble each piece yourself, working with rice and ingredients used in the restaurant’s own kitchen. Your guide is present throughout to interpret instructions, relay your questions to the chef, and help you follow the process accurately at each stage.
By the end of the session, you have a completed set of sushi pieces that you shaped with your own hands — and you sit down to eat them. The chef’s feedback and the back-and-forth during the session give you a grounded understanding of the technique behind each piece, from rice handling to the final press of a nigiri.
