You arrive in Tsuyama, a compact inland city in Okayama Prefecture known for its castle ruins and local food culture. As you step into the casual sushi restaurant selected for this experience, the setting is welcoming rather than formal — this is everyday Japanese dining culture, not a high-end omakase counter. The guide greets you and introduces the flow of the session before the chef takes the lead.
Standing at the counter or preparation area, you watch the chef demonstrate nigiri technique up close, then step in to shape the rice and press each piece of fish yourself. The guide translates the chef’s instructions in real time, so nothing gets lost between you and the chef. As you work through each piece, you ask questions directly, and the chef responds — whether about rice pressure, fish selection, or the basics of how sushi is made in Japan.
