What to Expect
You arrive in Tsuwano, a small historic town in inland Shimane Prefecture that has retained much of its Edo-period character. As you make your way to the restaurant, the setting shifts from sightseeing to something more hands-on. The venue is a casual sushi restaurant listed on Tabelog, where the atmosphere is welcoming rather than formal — a fitting introduction to the craft of sushi-making without the pressure of a high-end dining environment.
Once inside, the resident sushi chef steps in front of you and walks through the fundamentals of nigiri, demonstrating how to shape and press each piece with precision. You then follow along, shaping the rice, placing the fish, and assembling your own nigiri under the chef’s guidance. Your guide interprets the instruction throughout, so nothing gets lost between you and the chef. You ask questions as they come up, and the chef responds directly.
By the end of the session, you have shaped and assembled a set of nigiri sushi with your own hands. You sit down to eat what you made, finishing the 90-minute class with a direct sense of what goes into each piece.
