Overview
Experience an authentic sushi-making class at a traditional sushi restaurant in Ebisu, Tokyo, in collaboration with a wholesaler from Toyosu Market. This is a rare opportunity to grasp the professional environment of a working sushi restaurant while making your own nigiri sushi by hand.
The experience begins with a brief explanation of the roles of Toyosu Market and the wholesalers (tuna brokers). The seafood used is all freshly sourced that very morning. You will use the same vinegared rice (shari) served in the restaurant, allowing you to recreate the authentic taste and texture.
In this class, you will make and taste the following seven types of sushi:
- Ikura (Salmon Roe, Gunkan Maki) – A luxurious piece served in a seaweed cup, rich in saltiness and umami.
- Ebi (Shrimp) – A classic topping that is sweet and lightly boiled.
- Tamagoyaki (Japanese Omelette) – A traditional omelette with a flavorful dashi broth.
- Kanpyo Maki – A simple, sweet, and savory vegetarian roll.
- Maguro (Tuna, Akami) – The quintessential sushi with rich umami and refreshing taste.
- Hamachi (Yellowtail) – Known for its moderate fat content and firm texture.
- Salmon – A globally loved topping with melt-in-your-mouth fat.
During the experience, our experienced staff will provide careful support for each piece you make. With a small class size, even beginners and travelers can participate with confidence.

For those who want to deepen their sushi experience, we offer a plan that includes a tasting of four types of sake. Each sake is carefully selected to pair well with sushi.
- Hidakami (Miyagi) – A crisp, super-dry junmai sake.
- Konkon (Miyagi) – A special junmai with a gentle balance of umami and acidity.
- Yuki no Mei (Akita) – A junmai ginjo with a refined aroma and silky texture.
- Dassai (Yamaguchi) – A junmai daiginjo with a vibrant and sophisticated flavor.
Our staff will explain the characteristics of each sake and which fish they pair well with. The experience is designed to be enjoyable even for sake beginners, providing a luxurious moment to appreciate the synergy between sushi and sake.
